Chicken with Marinara Pesto Sauce over Wheat Gnocchi "Treat of the Day"

Grilled Pesto Chicken over Whole Wheat Gnocchi with combo 
Marinara Pesto Sauce topped with some Shredded Parm



Whole Wheat Rigatoni with Pesto Grilled Chicken "Treat of the Day"

Whole Wheat Rigatoni with Fresh-made Pesto and Grilled Chicken in a Marinara Sauce sprinkled with Cheeeeeeeeeeeeeeeese 
Ingredients
  • 2 tsp Olive Oil
  • 2 cups Pesto
  • 2 Chicken Breasts
  • 1 box Whole Wheat Rigatoni
  • 1 15 oz can of flavored tomato sauce
  • 1/4 tsp of oregano
  • 1/2 tsp of basil

Cook the pasta per instructions, making sure to season the water with salt and olive oil to reduce bubble-over. While the pasta is doing the damn thing, heat a skillet with some EVOO and pan fry your chicken breasts. Remove chicken from heat after fully cooked and cut into manageable bite size pieces. Rinse and drain pasta once it is done cooking. In your empty pasta pot, add the can of tomato sauce and heat over medium-low. While sauce is heating, add fresh herbs to the sauce to enhance flavors. Add the chicken into the sauce and simmer for 3 minutes. Top the pasta with the sauce then garnish with either Parmesan cheese or Feta cheese and fresh parsley. Enjoy.

Ham and Mortadella "Treat of the Day"

Ham and Mortadella with Grilled Peppers, Caramelize Onions, Chipotle Basil Mayo, Sun Dried Tomatoes and Swiss Cheese

Ingredients

  • 2.5 oz. of Sliced Ham
  • 1.5 oz. of Sliced Mortadella
  • 2 Slices of Swiss Cheese
  • 1 Red Pepper, grilled and sliced
  • 1 Loaf of Cheese Ciabatta
  • 1/2 Sweet Onion, chopped and caramelized
  • 3 Sun-Dried Tomatoes, chopped
  • Fresh Basil Leaves
  • 1 Cup of Flavored Aioli
  • Sweet & spicy mustard
  • Salt & pepper to taste
Caramelized Onion Construction
  • 1 tsp olive oil
  • 1/2 sweet yellow onion
  • Salt to taste
Heat olive oil in a skillet over medium heat; add onions, cook for about 30 minutes or until caramelized. Keep the onions in constant motion as to not allow burning. Onions will turn a delicious golden brown color and will have the most tantalizing aroma. Season with salt and set aside.

Sandwich Construction

Preheat oven to 400* F. 

Cut your Ciabatta the long way in order to construct your sandwich. Remove a couple pieces out of the bread in order to create room for all of the ingredients on the sandwich. Place your Ciabatta on a baking sheet that has been covered in aluminum foil and sprinkle some olive oil onto the bread. Spread the Cayenne aioli onto one half of the sandwich and cover with grilled peppers and caramelized onions.

On the other piece of bread layer some Swiss Cheese below the collection of meats. Top with mustard and chopped Sun Dried Tomatoes.  You can also add more aioli if you wish; salt and pepper to taste.

Place the baking sheet in the oven for 5 minutes to allow cheese to melt and crisp the bread. Insert some fresh Basil leaves in between the sandwich for a flavor blast in your mouth. (That's what she said!!...)

Consume and enjoy!


 

Grilled Pesto Chicken Ciabatta "Treat of the Day"

 Grilled Pesto Chicken with Sun Dried Tomatoes over Mozzarella Cheese and Grilled Peppers with a Cayenne Aioli and Pesto on a Cheese Ciabatta:

Ingredients

  •  2 Chicken Breast Fillets, grilled
  • 1 Red Pepper, grilled and sliced
  • 1 Package of Fresh Mozzarella, sliced
  • 1 Loaf of Cheese Ciabatta
  • 4 Sun-Dried Tomatoes, chopped
  • 1 Cup of Fresh Pesto 
  • 1 Cup of Cayenne Aioli

Pesto Construction

I used my food processor to prepare the fresh basil but you can also use a blender or the most "g-shit" ever in the mortar and pestle.

  • 2 Cup Fresh Basil
  • 4 Cloves of Garlic
  • 1/2 Cup Parmesan cheese, shredded
  • 1/2 Cup Olive Oil
  • Sea Salt and Fresh Cracked Pepper to taste
  • 1 Sun-Dried Tomato
  • 1/8 Cup Pine Nuts, toasted (optional)
  • Squeeze of Fresh Lemon Juice

In a dry skillet over medium heat, toast pine nuts for 3-5 minutes or until golden brown.

In your mixer add the garlic and pine nuts then pulse until chopped. Add the basil leaves, Parmesan cheese, lemon juice, salt and pepper then pulse until well blended. Slowly pour the olive oil in while the mixer is on. You will have to scrape down the sides a couple of times with your spatula. Taste and re-season with salt and pepper if necessary.

Cayenne Aioli Construction

In a small bowl mix the following ingredients until combined:
  • 1/2 Cup of Quality Mayonnaise
  • 1 tsp Cayenne Pepper
  • 1 tsp Paprika
  • Sea Salt and Fresh Cracked Pepper to taste
  • 5 Chopped Fresh Basil leaves
  • 1 tsp Oregano
Sandwich Construction 

Preheat oven to 400* F.

Grill the chicken for best flavor if possible. If not you can pan fry the chicken and it will be equally as tasty. Salt and Pepper to taste. Add a small amount of oil into your pan and add the chicken to cook. Do not overcook the chicken as it will spend a couple minutes in the oven as well. You can use the time while the chicken is cooking to make the cayenne aioli and fresh pesto. Once the chicken is finished cooking, place to the side for the time being while we begin to arrange the sandwich. (You can also cut the chicken into pieces if you wish for different textures)

Place your Ciabatta on a baking sheet that has been covered in aluminum foil and sprinkle some olive oil onto the bread. Spread the Cayenne aioli onto one half of the sandwich and cover with  mozzarella cheese slices. Cover the cheese with the grilled pepper slices and some of the fresh pesto. On the other piece of the sandwich spread a healthy serving of the fresh pesto. On top of the pesto add the chicken and chopped sun-dried tomatoes. You can also add more aioli, pesto and salt and pepper to taste.

Place the baking sheet in the oven for 5 minutes to allow cheese to melt and crisp the bread.

Consume and enjoy!

    Starting the Food Blog with Kush and OJ

    With some inspiration from the "For the love of Cooking" food blog, I am going to start a food/ music blog.

    These two things encompass everything in my life and I would love to share it with the world.

    This is going to be very informal to begin with as I get used to this blogging life.
