Banana Bread "Treat of the Day"

Time to make the house smell good and cook up some anananana bread. I am actually more excited today about the new music that is about to folllllow


Ingredients

* 3 or 4 ripe bananas, smashed
* 1/3 cup melted butter
* 1/2 cup sugar
* 1/2 cup brown sugar
* 1 egg, beaten
* 1 teaspoon vanilla
* 1 teaspoon baking soda
* Pinch of salt
* 1 1/2 cups of all-purpose flour

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 9x5 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve. Enjoy with some melted butter!

B.O.B. - Lovlier Than You "Track of the Day"

I have been meaning to get this up here for a while. This is one of my favorite tracks by B.O.B. and after seeing him live at the HOB with Lupe its about time he gets on the blog. He is a rapper that also plays guitar... OMG I love the new school music!

Breaded Pork Chops - "Treat of the Day"

The roommate bought some pork chops at the store today. This was my first journey with pork chops but I think it went well. I took a small recipe I found online and tweaked it to my liking with the stuff I had at home. I made a quick marinade the night before to let it sit and then applied the marinade to the pork for about 1 hour. This is not necessary but I like to think it brought the dish to another juicy level.

Ingredients

  • 2 eggs, lightly beaten
  • 2 tablespoons milk
  • 1 1/2 cups Italian seasoned bread crumbs
  • 1/2 cup grated cheddar cheese
  • 2 tablespoons olive oil
  • 2  pork chops
  • 1/2 cup AP flour

Directions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs and Cheddar cheese. On a separate plate spread out some flour for the dredging process.
  3. Heat the olive oil in a large, oven-proof skillet over medium heat. 
  4. Pat dry the pork chop if it has been marinating as to not allow a ton of flour to stick. We do not want lumps.
  5. Dip each pork chop into the flour (shake to remove all excess), then into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
  6. Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F (70 degrees C). 
 I served this with some Homemade Potato Chips, Apple Sauce, Green Beans and some Cornbread and Beer Bread. Delicious! 
 
 
 
 

Cooking has its sacrifices... Beer Bread "Treat of the Day"

So we bought a Mandolin... I knew it would come eventually but I did not think it would ruin me the very first day that I used. Slicing some potatoes the base thingy slipped off the potato as I was slicing and the next thing I know there goes some of the pinky. But after 3 hours of bleeding it was back to work.

Ingredients

- Nonstick spray
- 12 ounces all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoons kosher salt
- 1 teaspoon sugar
- 2 teaspoons of dried mixed herbs
- sprinkle of cinnamon
- 4 1/2 ounces sharp Cheddar, grated
- 12 ounces cold beer, Honey Wheat Sam Adams

Directions

Heat the oven to 375 degrees F. Coat the inside of a 9 by 5-inch loaf pan with the nonstick spray and set aside.

Whisk together the all-purpose flour, baking powder, salt, sugar, and herbs in a large mixing bowl. Add the sprinkle of cinnamon. Add in the cheese and stir in the beer just to combine. Spread the batter evenly in the prepared pan.

Bake on the middle rack of the oven until the bread reaches an internal temperature of 210 degrees F on an instant-read thermometer, about 45 to 55 minutes.

Remove from the oven and cool in the pan for 10 minutes. Transfer the loaf to a cooling rack for 10 to 15 minutes before slicing and serving. Serve warm with some herb butter!
